Doors, windows

It is a popular ingredient in salads. It is used as a side dish for meat dishes and for other purposes. This product has many beneficial properties that are preserved when preserved. It is a canned product of this type that is most often used in cooking, since fresh green peas retain their juiciness and other qualities not long after harvesting.

Green Pea Quality Standards

It helps to select and evaluate peas GOST R 54050-2010, which applies to natural canned food of such a product. According to this standard, peas are divided into products of the highest, first and second commercial grade.

  • The grains must be intact and without any admixture of shells.
  • Presence of brown fodder peas in canned food is excluded.
  • The smell is weak, natural, typical of canned green peas. There should be no extraneous tastes and aromas.
  • The color of the grains is uniform in one package, light green or olive.
  • The premium grade is characterized by a soft, homogeneous consistency. For the first, a soft, heterogeneous consistency and for the second, a harder, heterogeneous consistency.
  • The fill should be transparent with a greenish or olive tint.
  • Depending on the variety, up to 6-10% of the mass fraction of broken grains is permissible.
  • The products of the first and second grade may have a slight starchy aftertaste.
  • Single grains are possible, differing in color from the main mass of peas.
  • The presence of a slight sediment of pulp particles and a slight turbidity is acceptable for premium products.
  • It can be with a sediment in the form of starch and a cloudy filling of green peas, GOST allows this for goods of the first and second grade.
  • Mineral and other impurities should not be present.
  • Mass fraction of peas directly in canned food is not less than 60%.

How to choose green peas?

The GOST provides information on what the product should be like. But in the store it is in packaging, usually in an iron can. How to understand in such a situation which peas are better? There are some tips for buyers to help with this matter.

  • Choose cans with a production date printed in ink. If it is cut into a paper label or extruded into the bottom of the lid, it indicates that the equipment for the production of canned peas is outdated.
  • The best choice is green peas that were canned in May or June, as you can tell by their production date. During these months, young, but already ripe peas are harvested.
  • Choose products made in accordance with GOST, which must indicate the commercial grade - the highest, first or second.
  • You can shake the jar of peas. If there is no sound of iridescent filling, then the manufacturer has not regretted the product for canned food. The presence of thumping dull sounds indicates an old and hard pea in a jar with a small fill volume. It is better not to buy such a product.

When you open the canned green peas, pay attention to the color of the beans. If they are green, they can be used in salads and as a side dish. A yellowish color indicates that the peas are overripe and hard. It is better to use such a product in cooking, adding it to various dishes with additional processing: boil, stew, and so on. Brown peas are defective and should not be eaten.

Green peas are an irreplaceable ingredient for Olivier and vinaigrette, a good side dish for meat and poultry, goes well with pasta or mashed potatoes. Green peas are considered quite a dietary product. Like all legumes, it is a source of relatively complete protein. In canned food with natural peas, vitamins, for example, vitamin C, are perfectly preserved, unlike many products.

When choosing green peas, keep in mind that these canned foods are made either from fresh raw materials or from reconstituted ones.

  • Canned foods made from reconstituted peas have a lower nutritional value than those made from fresh peas.
  • Canned food made from fresh green peas contains more vitamin C than those made from dried peas and subsequently reconstituted.

How can green peas be dangerous?

As it grows and matures, it accumulates pesticides. Canned food made from low-quality raw materials, high in pesticides, can be harmful to health.
Canned green peas also usually contain salt. Excessive consumption of salty foods can provoke diseases of the cardiovascular system, kidneys.

You can find out which green peas are better, and which violations are inherent in this category, by reading the results.

We continue the topic "How to choose ..." and this time the object of my attention was, no less popular product for the New Year's table - Canned Green Peas!

As you know, almost not one salad can do without it. And during the holidays is one of the most popular products on the shelf.

Green peas are a very healthy product in any form.

And even when canning, almost all the valuable nutrients that it is so rich in are preserved in green peas: salts of potassium, phosphorus, calcium, B vitamins, carotene, vitamin C and PP, oxalic acid, purines, fiber. And green pea protein contains all essential amino acids, albeit in small quantities.

This concludes my brief tour of usefulness.

Now I'm going to talk about how to choose delicious canned green peas.

1. We examine the appearance of the container.

Canned green peas on our shelves are more often found in cans.

When buying, you need to pay attention, first of all, to the appearance of the can.
Crumpled and rusty cans should never be taken, because a piece of enamel could break off inside.
And when the metal interacts with the product, the metal will oxidize. And this will negatively affect the quality of the product.
In no case should you use such a product!

Glass containers are certainly better! Here you can appreciate the color and appearance of the peas.

But when examining glass containers, you also need to be careful: the lid should not be swollen.
This indicates that air has entered the can, and this can also lead to oxidation of the product, and the product will be dangerous to your health.

2. Appearance of the product (in glass containers)

The peas should be whole, bright, without peeling skin and sprouts.

The color of canned peas can be green or light green.

olive

or even yellow

But the peas must be of the same color and shape.

If there are brown grains in the jar, the batch is defective!

A cloudy white sediment at the bottom of the jar indicates that there is a lot of starch in the peas, that is, the product is overripe and will be tough.

3. We carefully study the label!

The most important thing is to choose green peas in accordance with GOST (GOST 15842-90) and pay attention to the type of canned: the most delicious peas will be of the highest grade or "extra"!

We read the composition.

Ideal composition: fresh vegetable peas, water, sugar, salt.

If a preservative is used, then the technology is broken or something is wrong with the equipment.

Calcium chloride is also found in the composition: it is a hardener.
I also do not recommend buying such peas.

First, let's figure out the varieties of green peas:

    cerebral - the highest grade. After boiling, it turns green even more. Smooth-grain - contains less sugars. After cooking, it becomes gray-green; sugar - not processed;

Shl. The word "cerebral" on a can of canned peas means that this is the best sugar pea variety.

Look not only at the expiration date, but also at the date of manufacture.

The most delicious peas are obtained during the harvest season: June or July.
If the peas are made in winter or autumn, it means that dry peas were used, the one that was previously soaked and steamed, and then preserved. Such a product is unlikely to preserve vitamins and other useful properties of green peas, and its taste will be strongly starchy.

Sometimes on store shelves you can find canned food from freeze-dried peas that have gone through the "recovery" process. But the quality of such canned peas is much lower than that of cereal peas. Freeze-dried peas are usually made according to TU. It tastes harsher. Although the price for a can is much lower. It can also be recognized by the date of manufacture.

Happy shopping!

Having carefully studied the information about the benefits of green peas, we strongly recommend that you include it in your daily diet, and not only in the composition of festive New Year's salads. Fresh and canned peas are a very valuable source of vegetable protein, carbohydrates and vitamins. It has a high content of mineral salts and trace elements. It is useful for the prevention of diseases of the cardiovascular system, as well as for maintaining the efficiency and energy of the body. Let's figure out what you should pay attention to when buying it.

Bank appearance

Most often, peas are sold in cans, making it impossible for us to examine their contents. However, even the appearance of the can can tell us a lot about the quality of the product. It should be free of dents, rust and chips: any damage can lead to the chipping of the enamel inside and its getting into the plate. When buying a glass jar, pay attention to the lid: it should not be swollen.

Composition

The only possible composition of high-quality peas is as follows: fresh peas, water, sugar. Any additions of preservatives indicate a low quality of the product. Peas must be produced in accordance with GOST and correspond to the highest grade. Brain is considered the best among the varieties; after cooking and canning, it turns green even more. If you see the name of this variety on the package - choose it. It is good both in salads and in soups and side dishes, it is very healthy and has an excellent taste.

Manufacturing date

When buying, it is important to look not only at the expiration date, but also at the date of manufacture: the most delicious and high quality peas will be those that are made in July, that is, immediately after harvest. If it is made in the fall or winter, then most likely dry peas were used for its production.

Pea species

After opening the jar, evaluate the appearance of the peas: they should be whole, bright, without peeled skin and sprouts. The color of canned peas can be green, light green or have a slightly yellowish tint of green. The peas must be of the same color and shape. If this is not the case, some of the peas differ in color or shape - the contents of this jar are not worth eating. The brine should be transparent - a cloudy white precipitate at the bottom of the can indicates that there is a lot of starch in the peas, that is, the product is overripe and will be tough.
