Cooking method

1. Pour the wine into a cup, mix it with the juice of one lemon and olive oil. Add ground pepper and salt. Rinse the greens, dry them and finely chop them. We spread it in the marinade. Mix everything well.

2. Defrost salmon, remove small bones, rinse and dry slightly with disposable towels. We shift the fish into a deep bowl and fill it with marinade. Leave to marinate for an hour and a half.

3. Peeled onions and my tomatoes. Cut the onion into half rings. Cut fresh tomatoes into rings.

4. Cover the baking sheet with foil, put the tomato mugs on the bottom. Lay the chopped onion on top of the tomatoes. Salt. Put the pickled fish on top. Sprinkle with lemon juice. Cover the top with a sheet of foil and put in an oven preheated to 150 C. We bake the fish for about 20 minutes. Serve with a potato or rice side dish.

Recipe 7. Red fish in foil in the "Fine" oven

Ingredients

half a kilo of red fish;

soy sauce - 60 ml;

coarse salt;

vegetable oil - 80 ml;

ground white pepper;

honey - 10 g;

20 g thyme.

Cooking method

1. In a deep bowl, mix the soy sauce, butter and honey. Season with salt, thyme, white pepper.

2. Clean the fish from the scales, separate the head, tail, fins and head. Separate the fillet from the ridge. Rinse and lightly wet with napkins. Dip each piece of fillet in the marinade and place in a deep plate, skin side up. Pour marinade over everything and refrigerate for two hours.

3. Place the marinated pieces of fish on a baking sheet covered with foil, skin side down. Top with marinade and cover with a second sheet of foil. Wrap the edges and place in a preheated oven for 20 minutes. Serve with fresh vegetable salad.

Recipe 8. Red fish in foil in the oven with capers and olives

Ingredients

200 g of chilled salmon;

coarse salt;

red onion;

ground pepper;

white wine vinegar - 50 ml;

eight pickled capers;

half a fresh tomato;

seven green pitted olives.

Cooking method

1. Peel the red onion, rinse and chop with thin rings or half rings. Transfer the onion to a deep bowl and pour over the vinegar. We marinate it for about ten minutes.

2. Wash the fish fillets and wet them with napkins. We cut each piece in half and remove the small bones. Salt and pepper the fish.

3. Place the fish skin side down on a baking sheet covered with foil. Cut the fresh tomato into half rings. Place the tomato slices on top of the fish. Squeeze the onion and lay it on the tomatoes. Put olives and capers cut into rings on the onion.

4. Wrap the fish in foil, forming a seam on top. We send the fish to the oven for 20 minutes. We bake at a temperature of 200 C. We take out the finished fish from the oven, cool slightly and open the foil. Transfer the fish to a serving plate using a spatula.

    If using frozen fish, thaw it in lightly salted water. This way, you will preserve the structure of the fish's muscle tissue.

    To make the fish aromatic and juicy, it must be seasoned with aromatic herbs, salt and leave for at least half an hour.

    Slice the red fish at a 45-degree angle to keep it from falling apart when baking.

    It is better to prepare a marinade for red fish based on white wine or soy sauce.
