Based on 400 g of ground beef, we take:

  • 500 ml kefir;
  • 700 g flour;
  • 150 oil;
  • 3 eggs;
  • 60 g sugar;
  • 10 g soda;
  • 1 onion;
  • a pinch of salt.

Preparation:

  1. Chop the onion, fry in a frying pan, add chopped meat to it.
  2. To fill, beat granulated sugar with eggs, add soda to kefir, pour it into the egg mixture.
  3. Add flour, mix, add softened butter.
  4. Pour half of the dough into the mold, lay out the filling (minced meat with onions), and then pour the rest of the dough on top of it.
  5. The pie will take 20 to 25 minutes to cook before serving.

For 500 g of minced meat (any) we take:

  • 1 cup rice;

  2. Pour onion (finely chopped) into the mixture, add pepper and salt.
  3. Form cutlets, place them in a frying pan, frying on each side. After this, place the cutlets carefully along the bottom of the pan.

Pasta with minced meat and mushrooms in a slow cooker

With a multicooker on the household, you don’t have to wonder, what kind of minced meat? If you need to make hot food quickly and feed the whole family, a recipe for a dish where minced meat goes well with pasta and mushrooms is ideal for you. Creating a quick, hearty dinner using a slow cooker is a feasible task even for novice cooks; all you have to do is follow the recipe carefully.

For 100 g of minced meat (any) take:

  • 150 g pasta;
  • 100 g mushrooms (frozen will do);
  • 40 g olive or other oil;
  • 1 onion.

Preparation:

  1. Pour the oil into the bowl and turn on the “baking” option for a few minutes.
  2. Chop the onion, throw it into the slow cooker for frying, add chopped mushrooms.
  3. Add the minced meat in small portions so that it does not form large lumps.
  4. After that, pour the pasta in there.
  5. Mix the ingredients in a slow cooker and simmer for about 60 minutes.

Pie with cabbage and minced chicken on kefir

A hearty quick-cooking dish also includes a pie recipe, where the main ingredients are chopped poultry and cabbage. To make the baked goods tender and airy, the dough is kneaded with kefir. The dish will delight everyone, and there will be no time for it to spoil: the finished pie is eaten instantly. For 300 g of minced meat, prepare:

  • 400 g cabbage (stewed);
  • 200 ml kefir;
  • 1 cup flour;
  • 25 g sugar;
  • 150 g butter (softened);
  • 1 teaspoon salt;
  • 3 eggs.

Preparation:

  1. Beat one egg with sugar and salt. Mix the resulting egg mass with a glass of kefir, add softened butter.
  2. Fry the minced chicken in a frying pan for a few minutes, then mix with the cabbage.
  3. Divide the dough in half, pour one half into the mold as a base, and add the filling on top. Pour it all over with the remaining half of the dough.
  4. Preparing the pie will take no more than 25 minutes.

Meatballs with gravy in a frying pan

Meatballs with gravy are among the most popular dishes based on minced meat. The ease of preparation and speed of execution make them an ideal option, especially when you have to think about what to cook for the main course from minced meat or what to feed the children if they don’t want to eat soup. You don’t even need a side dish for the meatballs if you make a dish of chopped fatty meat with gravy. It will take a little time, but everyone will gobble up the hot meatballs without hiding their pleasure.

Based on 500 g of minced meat we take:

  • 0.5 cups rice;
  • 450 ml water (for gravy);
  • 30 g flour;
  • 1 egg;
  • 30 g sour cream;
  • 1 tbsp. spoon of tomato paste;
  • 1 onion;
  • a pinch of salt.

Preparation:

  1. Boil the rice until crumbly, drain off excess water.
  2. Fry onions with chopped meat. Add egg and rice here and mix thoroughly.
  3. From the resulting mass, form meatballs in the form of a small ball.
  4. Pour oil into a frying pan and fry the meatballs on one side. Then turn it over and pour in water mixed with tomato paste and salt.
  5. Cover the dish with a lid and leave to simmer.
  6. In a separate container, mix sour cream with flour, after ten minutes add this mixture to the meatballs, bringing to readiness for about another 20 minutes.

Potato gratin with minced pork

What to cook from minced pork is tasty and quick? If the option of a hearty oven-baked dish with an appetizing crust suits you, then pay attention to. A more familiar and familiar understanding of the name of the dish is casserole. The difficulty is that when baking it is necessary to maintain the temperature regime. Experienced chefs advise starting with medium temperature and gradually increasing it.

For 300 g of minced pork we take:

  • 600 g potatoes;
  • 250 g broth (vegetable);
  • 1 clove of garlic;
  • 3 onions;
  • 40 g cheese;
  • 300 g sour cream;
  • 1 glass of cream;
  • 30 g butter (butter);
  • parsley, dill, paprika.

Preparation:

  1. Fry the chopped onion by adding a little water.
  2. In another frying pan, mix the chopped pork with garlic and paprika, frying the mixture for about ten 10 minutes.
  3. Place the potatoes, cut into slices, in an even layer on the bottom of the pan, add layers of fried onions on top, and then minced meat. Sprinkle with herbs.
  4. Pour the broth into the mold and place the dish in the oven for half an hour.
  5. Beat sour cream with cream, salt, paprika.
  6. Pour the mixture over the gratin, sprinkling the top with grated cheese. Leave the dish in the oven for 10-15 minutes until an appetizing crust forms.

Casserole of minced lamb and vegetables

For 500 g of minced lamb you need to take:

  • 4 potatoes;
  • 2 stalks of celery;
  • half a zucchini;
  • 1 onion;
  • 80 ml olive oil;
  • a teaspoon of coriander, paprika;
  • 50 g cheese,
  • 3 cloves of garlic,
  • a bunch of parsley.

Preparation:

  1. Grind the potatoes on a grater, mix the mixture with two tablespoons of olive oil, and put in the oven for a quarter of an hour.
  2. During this time, chop the onion and fry along with the zucchini and celery.
  3. Separately, fry the chopped lamb, spices, and chopped parsley.
  4. Remove the potatoes from the oven, place vegetables, minced meat, and grated cheese on top. Bring the casserole to readiness for another quarter of an hour.

How to quickly defrost minced meat at home

When planning to cook something tasty from minced meat, housewives have to deal with another important question - how to quickly defrost it? If you have a microwave, then defrosting the meat product will happen the fastest. But this method has disadvantages - loss of juiciness and the appearance of an unpleasant odor. You should not exclude other methods if there is no time to defrost the product naturally.

When the minced meat is finely chopped, a container with cool water is suitable for defrosting. You can speed up the process if you change the cool liquid to a colder one several times, then it will retain its taste, and the process itself will take about a quarter of an hour. Using a water bath, which will speed up the thawing of frozen food, will allow you to start cooking in half an hour.

Now let's start preparing the rolls. Cut a small piece from the dough. Roll it into a sausage and cut into several pieces. It’s the same as if we were going to make dumplings or manti, only we cut the pieces larger, twice as big. Dip each piece in flour and roll out into a circle, about the size of a small saucer. Spread with minced meat...

Ingredients are for one medium roll. Minced meat - any to your taste. You can mix several types of meat.


Prepare the dough as for dumplings. To do this, mix eggs with water, add salt, add sifted flour, knead elastic dough. You need as much flour as the dough will take. Add flour in small portions so that the dough does not become too tough. Once the dough is thoroughly kneaded, cover it and set aside. It must "rest". The dough can only be prepared in water if there are no eggs. Then you need to take a little more water than indicated in the ingredients. The water should be boiled. While the dough is settling, make the minced meat. Grind the meat and 2 onions in a meat grinder, chop the remaining onion very finely and set aside. Mix the minced meat and twisted onions, add salt and pepper. For juiciness, you can add a little water to the minced meat.


Roll out the dough into a thin layer.


Place a thin layer of minced meat on top, leaving a little space at the edges of the dough. The minced meat should be spread well over the dough.


Sprinkle finely chopped onion on top of the minced meat. This will make the finished dish more juicy. And then place small pieces of butter evenly on top of the onions. This should only be done if you do not have fatty meat.


Roll up, seam side down. Pinch the edges.


I cook this roll in a frying pan, so I immediately give it a round shape so that it fits into the dish later.


Chop vegetables for sauce. In addition to these ingredients, you can add sweet pepper and tomato. Onions need to be cut into half rings, carrots, tomatoes and sweet peppers into small slices. This time I didn’t have tomatoes and sweet peppers, but it tastes better with them. Even if I cook with tomatoes, I still add tomato paste.


Fry onions and carrots in a deep frying pan or saucepan in sunflower oil for 1 minute, add pepper and tomato, fry everything together for another minute, add tomato paste, stir, add water or broth so that the roll is half in liquid, add salt . Bring to a boil, reduce heat to low and place the roll in the pan, seam side down. Cover with a lid and simmer over low heat for 30-40 minutes.


Place the finished roll in a large dish, pour over vegetable sauce, sprinkle with your favorite herbs, and cut into portions. This roll goes perfectly with sour cream. But it’s delicious without it. There is no need for a side dish; it is an independent dish. You can steam this dish like manti. But stewed, for my taste, it turns out more juicy and tasty. A roll stewed with vegetables is suitable for a festive table, and is good as an everyday dish. Sometimes I serve chopped rolls to guests as a cold appetizer. It’s very convenient to prepare 2 or 3 rolls at once and freeze some in the freezer, and cook them if necessary. The process of preparing a frozen roll is absolutely identical.

Zeppelins (Lithuanian cuisine)

Cooking recipe ingredients:

Minced beef - 250 g
Pork - 250 g
Onion - 150 g
Raw potatoes - 1.2 - kg
Boiled potatoes - 350 g;
Spices (salt, ground black pepper)
Garlic - 5 - 6 cloves

For the sauce:
Smoked lard - 200 g;
Onion - 150 g
Sour cream (10 - 15% strength) - 500 g; Zeppelins (Lithuanian cuisine)

Cooking method:

Potatoes 350 gr. Boil, peel and grate the remaining potatoes. Grind the meat through a meat grinder. Peel 2-3 medium-sized onions, peel a few cloves of garlic and finely chop or grate.

Place the minced meat in a deep bowl, add very finely chopped onions, garlic, half a glass of plain water, salt and pepper to taste and mix the mass thoroughly. You can add a little mild curry. After mixing the minced meat until smooth, cover it with a lid and leave it in the refrigerator for now.

For the sauce:
Cut lard or boiled smoked bacon into thin strips and place it in a heated frying pan. After 2 - 3 minutes, add the finely chopped onion. Salt, pepper and mix. When the onion is slightly browned (after 5 minutes), add sour cream, bring to a boil and turn off the heat under the frying pan. The sauce is ready.

Strain the raw potatoes through a fine sieve or cheesecloth. All the juice, and therefore the starch, flows into the plate, and we mix the squeezed raw potatoes with grated boiled potatoes. Then carefully drain the liquid. There should be starch left at the bottom of the plate. Scrape it off and place it in a bowl with the squeezed potatoes.

Now the whole mass needs to be thoroughly mixed until smooth.

We make Zeppelins. Roll the potato ball, flattening it evenly over the entire surface. Thus, we will get a “cake” with a palm diameter, on which, in turn, we spread a little minced meat. Now all we have to do is connect the edges of the “dough” so that the minced meat remains inside. At the same time, the molded zeppelin should resemble the shape of an airship.

After making several pieces, place them in a heated frying pan and fry for 5-7 minutes over medium heat on each side.

Place the finished zeppelins on serving plates (2-3 pieces per serving) and pour the previously prepared sauce on the side.

Sometimes they prefer ordinary sour cream to a special sauce. Well, as you know, there is no arguing about tastes. The traditional recipe for making “Zeppelins” involves boiled zeppelins, but due to their unattractive appearance during this technological processing and the complexity of preparing the potato dough, some still recommend frying them in a frying pan or baking them in the oven.

But still, real zeppelins are only heated in a frying pan, these are the ones that were boiled and left uneaten, and they are simply boiled like dumplings in boiling water until they float, stirring carefully so that they do not stick to the bottom and burn.





But you don’t always have enough time and energy to prepare them, so I suggest a simpler, simplified option - dumpling dough rolls with minced meat in the oven. The dish turns out incredibly tasty, juicy and aromatic, but takes much less time, because the modeling process is much simpler here. These rolls will undoubtedly please your taste; they can be safely prepared not only for a family dinner, but also for a holiday table. In theory, the filling here can be very varied, I suggest making rolls with meat, I’m more than sure that no one will be able to refuse the addition, it turns out so tasty, appetizing and tender! My minced meat is pork, but any other you have on hand will do. Add salt and spices according to taste, as well as herbs. Don't be afraid to experiment and you will definitely succeed!

Ingredients:

for test:

  • 1 chicken egg.
  • a pinch of salt.
  • 200 ml water.
  • 0.5 kg. wheat flour.

For filling:

  • 0.5 kg minced meat.
  • 1 onion (turnip).
  • fresh herbs - to taste.
  • salt and spices - to taste.

additionally:

  • 1 onion (turnip).
  • 1 carrot.
  • 1 bell pepper.
  • tomato paste - to taste.
  • salt - to taste.
  • water - in fact.
  • vegetable oil – in fact.

Number of servings: 5.

How to make dumpling dough rolls with minced meat:

First of all, let's prepare the usual dumpling dough. You can use your favorite recipe or cook mine. Beat the egg with salt and water. Add flour. First mix the dough with a spoon, then continue kneading with your hands. Add flour as needed so that the resulting dough is elastic and not too tight. Cover the dough and let it rest for 20-30 minutes.

For the filling, combine minced meat, salt, spices, herbs and chopped onion. Stir and set aside for now.

Chop the bell pepper into strips, chop the onion into strips, and chop the carrots on a grater. Fry the vegetables with salt for literally three minutes until al dente.

Cut the dough into pieces and roll each one in flour.

Roll out pieces of dough in the shape of a circle, approximately the size of a small saucer, the thickness is the same as when making dumplings. In general, the size here can be absolutely any, you can make rolls a little larger and vice versa small. In my opinion this is the best option, but it's a matter of taste. Place the filling on each rolled out piece of dough, distributing it in an even layer, only slightly retreating from one edge.

We turn the edges on both sides. And we roll it according to the principle of a roll, just as in theory we roll pancakes or cabbage rolls.

We do the same with the rest of the dough until the minced meat is gone. I got ten pieces. If you suddenly have dough left over, don’t worry, just put it in the freezer until next time, it tolerates freezing perfectly.

Now take a suitable form and place fried onions, carrots and peppers on the bottom, distributing the vegetables in an even layer.

Place the rolls on top of the fried vegetables. Place the dough rolls so that they are at some distance from each other. If your shape is small, then either reduce the ingredients or cook in two stages.

Combine tomato paste, salt and water. I take 2 tbsp. l. tomato paste per 0.5 liters of water. If desired, reduce or increase the amount of paste to taste. Pour the mixture into the mold. The liquid should eventually cover the rolls by a little more than half.

Place the pan in an oven preheated to 200*C for one hour, covering the top tightly with foil.

Serve hot rolls with minced dumpling dough in portions along with vegetables. The result is a very tasty, juicy and nutritious dish. If you prepare this dish, I am sure that you will be more than satisfied!
