No-bake desserts are a holiday on your table. We have prepared recipes with step-by-step photos: desserts with cottage cheese, berries, fruits - simple and delicious.

  • strawberries and kiwi - 300-500 gr
  • biscuit cookies or sponge cake - 300 gr
  • sour cream - 500 gr
  • gelatin - 20 g
  • sugar - 200 gr

Pour gelatin into a small saucepan, add cold water (0.5 cup) and leave for 30 minutes.

Line a deep dish with cling film.

Cut strawberries and kiwis (you can use other fruits and berries).

Place a layer of strawberries and kiwi on the bottom of the mold.

Break the biscuit cookies into pieces. I didn't have any cookies, but I did have a sponge cake that I cut into cubes.

Place a layer of biscuit pieces on top of the berries. Then again a layer of berries and a layer of biscuit.

Place gelatin on low heat and heat until completely dissolved (do not boil).

Beat sour cream with sugar and pour into gelatin in a thin stream, stirring.

Pour the gelatin mixture over the biscuit with berries and put it in the refrigerator for 2 hours (preferably overnight).

Remove the dessert from the refrigerator and turn it over onto a plate.

Carefully remove the film.

Recipe 2: Blancmange curd dessert without baking

  • 0.5 glasses of milk;
  • 1 sachet (15 g) gelatin;
  • 1 sachet (10 g) vanilla sugar;
  • 250 g cottage cheese;
  • 0.5 cups sour cream;
  • 0.5 cups of powdered sugar;
  • 2 pineapple rings (or other fruits).

Recipe 3: Japanese-style no-bake cottage cheese dessert

  • 200 g cottage cheese;
  • 1 tbsp. l. powdered sugar (without top);
  • 1 tbsp. l. sour cream;
  • 10 dried dates;
  • 20 hazelnuts (-8 pieces, leave whole for serving);
  • ½ tbsp. l. sesame;
  • ½ tbsp. l. coconut flakes.

Place the “curd roll” in the refrigerator for 20 minutes. Cut into portions. Wet the knife with water. Sprinkle the curd dessert with powdered sugar, decorate to your liking and serve.

Recipe 4: French Charlotte cookie dessert without baking

This is the perfect combination of soft cookies in syrup with strawberries and delicate cream.

  • Cookies “fingers” - 40 pieces
  • Cream cheese - 250 grams (or yogurt)
  • Strawberries - 250 Grams
  • Sugar - 1 tbsp. spoon (+ 2-3 spoons for syrup)
  • Vanilla sugar - 1 teaspoon
  • Water - 1 Glass
  • Powdered sugar - 1-2 tbsp. spoons

First you need to boil the syrup. To do this, combine water with sugar and simmer over low heat until the sugar is completely dissolved. If you have strawberry liqueur on hand, be sure to add a couple of spoons.

While the syrup is cooling, prepare the cream. Place cream cheese or full-fat yogurt in a deep bowl.

Wash and dry the strawberries. Large berries can be cut into small pieces.

Add sugar and a pinch of vanillin to the cream, beat everything until fluffy. Place about half of the berries (you can set aside a little if your French charlotte will be decorated with berries on top when serving).

Mix everything well.

Prepare a springform pan or muffin tin. Sprinkle it with powdered sugar. Dip each cookie into the syrup and immediately place in the pan.

Sprinkle the cookies with powdered sugar and spread the cream in an even layer. Add some more berries.

Now - cookies again, not forgetting to dip them in syrup and sprinkle with powder.

And so on until the very top of the form. There are many options for preparing French charlotte: from serving in a tall glass to a large mold that can fit up to 7 layers of cookies and cream.

Afterwards you need to give the dessert a chance to soak in. Leave the finished charlotte for at least 1 hour. Then carefully turn it onto a serving plate and decorate the top with berries, powdered sugar or remaining cream, for example. Bon appetit!

Recipe 5: no-bake dessert with fruit in tea jelly

A light dessert of tea and fruit. This is not only very tasty, but also an excellent refreshing dessert. To prepare it you need a small amount of ingredients.

  • green tea - 1 tbsp.
  • sugar - 3 tbsp.
  • lemon - ½ piece
  • gelatin - 5 g
  • banana - 1 piece
  • orange - 1 pc.
  • grapes - 100 gr

You need to pour gelatin with 3 tablespoons of water and leave to swell for 10 minutes (or for the time indicated on the package).

Brew 300 ml of tea as usual. When the tea has steeped a little and cooled slightly, remove the tea leaves, add sugar and the juice of half a lemon. Also add gelatin, mix well until it dissolves. Cool.

It is necessary to peel the banana, cut into cubes, cut the grapes in half, peel the orange and also cut into cubes.

Place chopped fruits in bowls or glasses.

Pour in tea and refrigerate for 4-5 hours until completely set.

If desired, decorate the cooked fruits in tea jelly with mint leaves and the dessert is ready.

Recipe 6: no-bake dessert “Snow Cherry” with chocolate

  • cherry - 1 cup
  • rice cakes - 3 pcs
  • whipped cream
  • chocolate
  • powdered sugar
  • cinnamon

For each serving, take a wide glass. Grind the rice cakes and place them on the bottom of each glass.

Sprinkle the contents of the glasses on top with sugar, crushed to a powder state. The amount of this ingredient depends on your taste.

Place a cherry in each glass (defrost it first). For all servings, use exactly half of the total volume. Divide large berries into halves. Add just a little cinnamon to each serving.

Fill the contents of the glasses with whipped cream. Grate the chocolate (dark or milk) finely and place a handful of the resulting crumbs into each glass. As a result, the glass should be half filled.

Then do it all again: some rice cakes, powder, cherries, cinnamon, whipped cream and chocolate. A few smooth and beautiful cherries can be left to decorate this dessert.

Divide a small chocolate bar into cubes and stick a piece into each glass. You can also use confectionery sprinkles as decoration.

Recipe 7: no-bake dessert - chocolate-covered bananas (step-by-step photos)

If desired, you can serve these chocolate-covered bananas simply chilled, but if you wait until they are completely frozen, then you will get very tasty ice cream!

  • Bananas - 3 pcs. (large size)
  • Dark chocolate – 100 g
  • Butter - 30 g
  • Confectionery topping – 10 g
  • Coconut flakes - 10 g

Peel the bananas and cut into 2 parts. If you suddenly can’t find larger bananas, then take small ones and use them whole. Also, large bananas can be cut not into two parts, but into pucks; in this form, chocolate-covered bananas will be very convenient to eat even for very little sweet tooths.

We take long skewers for kebabs and cut them into two parts with scissors. Place the sliced ​​bananas on skewers. By the way, if you have the opportunity to buy special wooden popsicle sticks, then be sure to buy them, since bananas sit much more comfortably on such wide sticks, but in the absence of them, ordinary wooden skewers will do.

Place the resulting banana “popsicles” on a freezing tray and place them in the freezer for about 5 minutes. We need them to cool slightly on top. There is no need to completely freeze them at this stage.

While the bananas are cooling, prepare the glaze. Break chocolate (I used 56% black, but you can use a mixture of dark and milk or just milk, depending on the sweetness of bananas and your taste) into small pieces and combine with butter.

Melt the chocolate in a steam bath or in the microwave until it becomes smooth. Whatever method you choose (bathhouse or microwave), the main thing is to never overheat the chocolate, otherwise it will curdle and turn into a lumpy mass. Therefore, stir the chocolate as often as possible and check its consistency.

Pour the resulting glaze into a tall narrow glass (for me it’s a glass for making yogurt). If there is no suitable container, then we simply skip this step.

Now we take out the cooled bananas and quickly dip them into the glaze one by one (do not keep the bananas in the glaze for a long time, since then the layer of chocolate will be very thick).

If you haven’t found a suitable glass for the glaze, then simply apply the chocolate with a spoon or brush, or completely roll the bananas in melted chocolate.

Next, take the bananas out of the glaze and quickly (on cold bananas the chocolate sets quickly) sprinkle them with all kinds of sprinkles, or you can just roll them in them. In general, here you can safely use your imagination and decorate bananas the way you want.

Recipe 8, simple: strawberries and cream, no-bake dessert

  • Strawberries - 300 g
  • Heavy cream - 150 ml
  • Sugar - 2-3 tbsp.

For 5 small bowls we will need approximately 300 grams each. strawberries, half as much (150 ml) cream with a fat content above 30% and 2-3 tbsp. Sahara.

Grind the washed and sepal-free strawberries with sugar into a homogeneous puree using any suitable device.

While adding sugar, beat the cream in a thin stream as steeply as possible until a very dense, stable foam forms.

Adding one to the other in small portions, mix thoroughly until a homogeneous foam is obtained.

Pour the strawberry-cream foam into bowls (preferably into transparent ones). I think the consistency is clearly visible drop by drop? The number of servings depends on the volume of containers you have available. Place the strawberries and cream in the refrigerator for at least 1 hour.

If you keep strawberries and cream according to this recipe in the refrigerator for 3-4 hours, you can get a very beautiful effect - separation and the appearance of darker-colored and translucent juice on the bottom. The taste there, in general, does not change, it’s just for beauty, the dessert will be ready for consumption after the first hour. It can be decorated with whipped cream roses and mint or lemon balm leaves.

Recipe 9: curd mousse with berry sauce (with photos step by step)

For the mousse:

  • cottage cheese - 400 gr
  • butter - 75 g (optional)
  • sour cream - 100 g (low-fat, but can be replaced, if desired, with cream, then the mousse dessert will be more liquid, but also higher in calories)
  • sugar - powder - 100 g (for those losing weight, you can replace it with a natural sweetener, for example, stevia)

For the berry sauce:

  • berries - to choose from - 100 g
  • sugar - powder - 30 g

Filling to choose from:

  • nuts - a handful
  • flax seeds - a handful
  • berries - strawberries or blueberries
  • fruits - banana and peach
  • cocoa - for chocolate-curd mousse - 2 tbsp

Cottage cheese with fruit is incredibly quick and easy to make. We take homemade cottage cheese (this is important, such cottage cheese is much tastier, healthier and not so crumbly, which is good in this case!)

Add sour cream or cream to homemade cottage cheese and grate the butter.

Fill everything with powdered sugar or natural sweeteners of your choice and take out the blender.

Curd mousse is prepared in a blender in a minute; I personally use an immersion blender, which results in much less dirty dishes in the end. We put the immersion blender into the bowl and grind everything very well until completely homogeneous.

Depending on how much sour cream or cream you add, the consistency of the curd cream will change from more liquid to more solid.

Now is the time to add the toppings. The first thing you can put in is nuts. We put them in some kind of bag and hit them, for example, with the bottom of a glass.

Pour into a dessert of cottage cheese with fruit or mix into curd mousse. If you want to get chocolate mousse, add cocoa brewed in a glass of hot water after cooling.

Berry sauce for serving. Berries that are in season are perfect, but frozen berries will do just fine. Place them in a chopper, sprinkle with powdered sugar and grind thoroughly.

Now we take ordinary glasses and start laying out the beauty. You can put all the curd cream mousse at once, and then top it with berry sauce, or you can make it a little prettier. Add a couple of tablespoons of a delicious dessert made from cottage cheese and nuts.

Spread a couple more tablespoons of berry sauce on top, and then curd mousse again.

Add another spoonful of berry sauce.

And sprinkle with chopped nuts.

Recipe 10: “Mochi” - Japanese dessert without baking (with photo)

Mochi is made by hand. The process is quite complicated, but if you use special rice flour, everything will become much easier, and mochi can be prepared without the help of others. For mochi, they use a lot of fillings - sweet pastes made from red beans, peanuts, sesame, chestnut. The Japanese, along with the classic ones, offer fillings with the most common flavors - cherry, peach, strawberry. The finished dish is frozen and thawed before eating and served cool. Yield: 10-12 pieces.

  • Rice flour - 50 g
  • water - 150 mg
  • sugar - 100 gr
  • cream 35% – 75 mg
  • dark chocolate – 100 gr
  • corn starch - 100 g

I start cooking with the filling: Pour the cream into a bowl and put it on the fire. When the cream starts to boil, add pieces of chocolate to it. Stir until smooth. I set it aside until the chocolate has cooled, then put it in the freezer (the mass must keep its shape).

Next: pour water, sugar and rice flour into a saucepan, stir and put on fire. The mass will soon begin to harden, I lift the pan over the flame and stir vigorously, and as a result a snow-white, compacted mass will come out.

Now I pour starch on the table and pour the mass onto it. I let it cool and before sculpting I sprinkle starch on top (it is allowed to sprinkle excess starch, all excess can be easily shaken off).

How to cook:

Cut the bananas into large cubes and place them in the freezer for several hours until completely frozen. When the banana pieces are frozen, take them out of the freezer and put them in a blender. We also send cinnamon and yogurt there. At this point you can add a flavoring filler that you prefer: peanut butter, nuts, cognac.

If you are using liquid ingredients (for example, cognac), add them a little at a time so that the overall consistency of the ice cream does not lose its shape.

Blend everything in a blender until smooth and delicious homemade ice cream is ready!

Ingredients:

  • 500 g flour;
  • 2 bananas;
  • 2 tablespoons cane sugar;
  • half a glass of regular sugar;
  • 100 g butter;

Cooking without baking

  1. First, in a small saucepan, which can then be put on the fire, soak the gelatin in a glass of warm water. It is left until it swells.
  2. At this time, the cookies are crushed. Place it in a thick plastic bag, take a meat hammer or rolling pin, start tapping the bag, turning it over periodically. Fresh “Jubilee” cookies can be crushed without removing them from the package.
  3. Beat cold sour cream or yogurt with sugar using a mixer or blender, the milk mixture turns out fluffy.
  4. Combine whipped sour cream or yogurt with cookies, knead with a spoon until smooth. The resulting mass is placed in the refrigerator. It can be immediately divided into two parts; if desired, a little instant coffee or cocoa is added to one.
  5. The gelatin has already swollen, put the saucepan on the fire, stirring constantly, and bring to a boil. If the gelatin dissolves early, immediately remove the saucepan from the heat. Gelatin should cool to 30-35°C.
  6. Prepare the layer. To do this, the cottage cheese is passed through a sieve to obtain a homogeneous mass. Add condensed milk, melted butter, and dissolved cooled gelatin. Beat the mixture thoroughly and put it in the refrigerator.
  7. Take a cake pan, grease it with oil or line it with cling film, parchment paper for baking, it also needs to be greased a little. To do this, use unscented butter or vegetable oil.
  8. Kiwi is peeled and the peel is removed in a thin layer from the whole fruit. Cut the fruit into thin, almost transparent rings, and divide the resulting amount approximately equally. You will need to make two layers of kiwi.
  9. Start assembling the cake. First, lay out half of the cookie mixture, level the layer and compact it. The top layer is covered with kiwi plastics, they are placed overlapping each other so that the green layer is clearly visible on the cut of the cake.
  10. Then carefully spread the curd mixture. It should not be compacted too much; it is convenient to level it with a wooden spatula. Carefully place the remaining kiwi rings on top of the curd layer. Then comes the final layer of cookie mixture. To avoid crushing the lower layers, you first need to form a layer from the mass using a plastic bag. Then carefully transfer it into the mold.

  1. Turn on the oven while it is heating up and make the shortbread dough. First, separate the whites from the yolks. Take 3 yolks, half a glass of sugar and melted butter. Mix everything well and add flour. The dough should be quite dense. Put it in the refrigerator while you prepare the bananas.
  2. Cut the bananas into slices, you can lightly sprinkle them with vanilla sugar for an even more interesting aroma.
  3. Level the dough to the diameter of the baking pan. Don't forget to grease the pan with butter first to prevent the cake from sticking.
  4. Place sliced ​​bananas on top of the dough and brush them with sour cream. It is important that the sour cream is quite fatty and not sour. Adjust its taste by adding sugar, vanilla, coconut, powdered sugar.
  5. Place the pie base in the oven for 20 minutes. While the pie is baking, use the remaining 3 egg whites and half a glass of sugar to make an airy cream. You need to beat the whites thoroughly and for a long time to get everything right, about 10 minutes.
  6. Take out the almost finished pie and pour whipped egg white on top. You can decorate it with the remaining bananas, almond flakes, candied fruits - whatever you have on hand and what you like best.
  7. Place the pie in the oven for just three minutes.

The pie is ready!

It is wonderful both warm and chilled. As you can see, the recipe is really simple, in addition, you can diversify it as you wish - add nuts, dried fruits, chocolate chips, pieces of marmalade... Enjoy this amazing dessert!

Ingredients for 4 servings:

  • Banana (4 pcs.)
  • Semolina (0.5 cup)
  • Milk (1 cup)
  • Chicken egg (2 pcs.)

– the dish is as simple as possible in terms of preparation, but very tasty and aromatic. It will surely appeal to both adults and children. Banana pudding is prepared using a double boiler, which reduces the housewife's labor costs to a minimum.
So, at the initial stage, mix milk and eggs. This can be done by hand or using a blender.

Add semolina to the resulting mixture and beat thoroughly again.

After this, peel the bananas, cut them into circles and place them in a baking dish.

Pour the resulting mixture over the bananas and place in a double boiler for 40 minutes. Even if you forget you're making pudding, the steamer will turn itself off and prevent that delicious dish from going wrong.

When the pudding is ready, remove it from the steamer and let it cool slightly. In this case, the liquid formed during the cooking process and released at the edges of the dish will be absorbed back.

After this, the pudding can be cut into pieces and served. It can be either lukewarm or at room temperature. In any case, you will get exceptional pleasure from this dish. If you notice, this dish is prepared without adding sugar, but the bananas compensate for the lack of it, and the pudding turns out very sweet and amazingly aromatic.

CHOCOLATE BANANA CAKE

Ingredients:

  • Chocolate gingerbread 500 g
  • Sour cream ½ g
  • Bananas 3 pieces
  • Sugar ¼ cup
  • Chocolate to taste
  • Cocoa 4 tablespoons

Preparation:

  1. Cut the chocolate gingerbreads lengthwise, each into 3 pieces.
  2. Prepare the cream. To do this, add cocoa and sugar to the sour cream and beat well until the sugar dissolves so that the volume increases 1.5 times and it becomes thick.
  3. Cut bananas into slices.
  4. Then place the gingerbread mugs on a plate, filling the space between them with gingerbread crumbs.
  5. When the first layer of gingerbread is laid out, grease it with cream and spread evenly with a knife.
  6. Place bananas and spread evenly with cream again.
  7. And thus lay out the remaining gingerbread cookies in layers, alternating them with cream and banana filling. Constantly control the shape of the future cake when laying out the next layer of gingerbread. Sprinkle with chocolate chips.
  8. Then put it in the refrigerator for 24 hours so that the cake is completely soaked.

  • 3 bananas
  • 300 g cottage cheese
  • 150 g sugar

  • 3 tbsp flour

To prepare a gingerbread cake with bananas, you need to cut the gingerbreads in half lengthwise, cut the bananas into circles, mix sour cream with powdered sugar, and chop the nuts not very finely.

Line the bowl with cling film so that the edges hang down. Gingerbread slices should be dipped in sour cream and placed on the bottom of the bowl, filling the gaps with gingerbread fragments. The next layer should be a banana, another layer of gingerbread on it, then another layer of bananas, sprinkle with nuts. The last thing you need to do is lay out a layer of gingerbread cookies. There may be more layers, depending on the size of the mold and the amount of ingredients.

You can use other fruits. You can put more nuts on each layer or not at all (to taste). When laid out this way, the gingerbread cookies look like regular chocolate cakes with a fragrant banana layer. If the gingerbread is thickly covered with sour cream, the cake will have a delicate consistency. Leave at room temperature for several hours, then put in the refrigerator for at least 3 hours, turn over onto a plate, remove the film.

When serving, gingerbread cake with bananas can be decorated with grated chocolate, cocoa or poured with dark melted chocolate. I also sprinkled with coconut flakes.

"Banoffee pie" - pure banana bliss

It's as easy to prepare as a sandwich - slice it, spread it and pop it in your mouth! :)

The basis:
- shortbread cookies with baked milk flavor - 300g
- butter - 100g

Filling:
- condensed milk (boiled) - 1b
- bananas - 3 pcs
- cream - 450ml
- powdered sugar - 2 tbsp.

Cocoa/coffee/chocolate topping

  1. Grind the cookies into fine crumbs.
  2. Pour melted butter into it. Grind.
  3. Press the cookies into the mold and place them in the refrigerator for 20 minutes.
  4. Apply a thick layer of condensed milk.
  5. Mode bananas, as your heart desires and put them in the form.
  6. Whip the cream with powdered sugar until stiff peaks form. We fill a pastry bag with them and start creating :) I squeezed out a drop at a time - it turned out quite interesting.
  7. Drizzle chocolate or sprinkle coffee on top.
  8. Be sure to let the cake sit in the refrigerator!

It turns out very tender, airy and not as cloying as it might seem at first glance.
