How to make cauliflower cutlets

I washed the cabbage forks under running water, thoroughly to remove sand and other possible contamination. Divided into inflorescences, discarding leaves and stump.

We will cook boiled cabbage cutlets. Therefore, in a large saucepan, I brought the water to an active boiling point, slightly salted it and threw all the inflorescences into the bubbling boiling water. Boiled on low heat for 6-7 minutes. Vegetables should be softer, but not overcooked and not turn into "porridge".

I threw the inflorescences boiled until almost ready in a colander and left them to cool for a while.

At the same time, I sautéed onions, chopped into cubes, in a small amount of vegetable oil (1 tbsp. L.). Do not fry too much, just bring the onion until soft so that the bitterness goes away and it tastes sweet.

Next, boiled inflorescences need to be chopped - you can use a blender, a food processor in a pulse mode, in a meat grinder or manually. Just do not turn into mashed potatoes, because we still do not cook cauliflower pancakes, but cutlets, here the consistency should be of a larger fraction so that the products become lush and dense.

I added previously browned onions and a couple of eggs, stirred and added flour at the end. Leave it for 5 minutes to swell the flour. The cabbage mass should be thick, dense in consistency, like minced meat cutlet. You can add finely chopped parsley, dill or cilantro if you like, although it will turn out delicious without greens.

From the vegetable "minced meat" with my hands soaked in water, I formed medium-sized cutlets - about 1 tbsp. l. per serving.

She put vegetable cutlets in hot oil (you can fry in a saucepan or in a frying pan) and cook on both sides until golden brown. I cooked first at high heat, and then at moderate heat, so that the products were baked inside.

Fried cauliflower patties should be blotted with a paper towel before serving, as they absorb a lot of oil during frying. For children, you can cook steamed cutlets from the same "minced meat".

Divide the cabbage into small inflorescences and boil in slightly salted water for 7 minutes, until half cooked, then chop with a knife or through a meat grinder. Add eggs, cumin, 5 tbsp. l. bread crumbs and 100 g grated cheese, salt and pepper.

Cauliflower cutlets with oatmeal

This recipe for cabbage patties is vegetarian. Instead of eggs, ground oatmeal is added, due to which the products do not fall apart and are tender.

  • 500 g of cauliflower;
