If you like to cook homemade bread and all sorts of interesting flatbreads, I suggest you try a very simple recipe for flatbread with green onions, which are fried in a pan. The dough is unleavened.

I don't know if the Chinese realize they are called Chinese. In my opinion, it doesn't matter. The main thing is that these fried tortillas with green onions are very tasty, there are a minimum of ingredients and making them is quite simple and fast.

The composition of the cakes

for 12 cakes

  • Flour - 225 g (in a glass - 160, that is, a little less than 1.5 glasses) + a little flour for rolling out the dough;
  • Boiling water - 150 ml;
  • Salt - to taste;
  • Sesame oil (or other vegetable. For example - sunflower, olive, walnut) - 1 teaspoon (in the dough) + 2 teaspoons (for lubrication);
  • Green onions - a little (small bunch);
  • Vegetable oil for frying.

How to cook

  • Sift flour. Add 1 tsp. sesame oil, salt (I put 2-3 small pinches). Pour boiling water over and mix with a spoon until flakes form.
  • When the dough becomes warm (it cools down a little), knead it with your hand, kneading until smooth. Roll the dough into a ball. Cover it with a napkin and leave for 20-30 minutes.
  • Rinse green onions, dry. Cut in small pieces.
  • Sprinkle the surface for rolling out the dough and the rolling pin with flour. Roll out the dough (sprinkling it with flour) in the shape of a rectangle 2-3 mm thick.
  • Lubricate the rolled dough with 2 tsp. sesame oil. Sprinkle with green onions. Roll the dough into a tight roll. And cut it into 12 pieces.
  • Connect each piece from the ends. Again - roll into a ball and roll into a cake (diameter 8-10 cm). If suddenly the cakes stick to the rolling pin or board, add a little flour (but do not abuse it - excess flour will burn).
  • Pour frying oil into a wide frying pan (layer = 1 cm). Heat up. Put the cakes in a pan, fry on both sides over medium heat until golden brown.
  • Put the finished cakes on a paper towel (to absorb excess fat). Serve hot with strong and sweet black tea.

I think you will be happy with the result. Herb dumplings are delicious and nutritious! They are prepared from lean foods. And they are good as bread for main courses, and as an independent meal for a snack.

Ruddy, fried cakes with green onions are offered as a snack in almost all restaurants in China. They are eaten with soy or chili sauce. They are appetizing on their own, without any dips, toppings or fillings. Crispy crust and soft texture inside, slightly salty aroma of bread combined with the smell of green onions - the recipe for such flatbreads has been passed down in China from generation to generation.

Ingredients:

225 g flour
150 ml. boiling water
1 tsp sesame oil (real dark, odorous) or to your taste
4 (feathers or twigs, generally counting by the white parts) green onions


Process:

1. Sift flour into a bowl. Add salt, sesame oil and boiling water.


2. Stir the mixture quickly with a wooden spoon(s) until all the flour is wet. The dough will come together in flakes, as in the photo:

3. Allow the contents of the bowl to cool slightly and knead the dough with your hands until smooth. Roll into a ball, return to the bowl, cover with a towel and let stand for 20-30 minutes.


4. While the dough is resting, wash and cut green onions. The quantity is up to you. It took me 4 branches.
5. Sprinkle the work surface with flour. Roll out the dough into a rectangle / square 2-3 mm thick. Lubricate with vegetable oil of your choice (sunflower, corn, sesame, or if you like it spicier - chili oil). I used corn. Top with onions.


6. Roll the dough with the filling tightly into a roll and cut it into 12 pieces.


7. Pinch each piece on both sides, flatten the resulting lump with the palm of your hand and roll it into a thin cake with a diameter of about 10 cm.




8. Pour vegetable oil into a frying pan (do not be stingy, the cake should have a crispy crust) and heat it over medium heat. Spread the cakes in a pan (oil should boil with white small bubbles along the edges of the cake) and fry until golden brown. By the way, I tried to fry in chili oil - also wonderful. This oil gives the cakes a slight spiciness.


Serve with Chinese dishes. Although with borscht it’s very good))
It is best to eat cakes hot, piping hot.

The composition of the filling and additives in many recipes can be modified at your discretion. The dough for cakes can be prepared yeast or unleavened on kefir, mineral or plain water. Sometimes purchased dough is used, more often puff pastry.

Uzbek bread with onions in the oven

The recipe for national Uzbek cakes with onions, which can be easily cooked in the oven. Yeast dough on water. Onion according to the recipe is used onion.

Ingredients

1 tsp yeast;

1 glass of water;

70 ml of sunflower oil;

300-350 grams of flour;

7. Send to a greased baking sheet, sprinkle with sesame seeds and bake.

Quick tortillas with green onion and egg

The recipe for quick tortillas with green onions and eggs. They will help out if you suddenly run out of bread or want something tasty.

Ingredients

1 boiled egg;

5-7 onion feathers;

4 tablespoons of flour;

1 raw egg;

4 tablespoons of kefir;

A pinch of salt with sugar;

1/3 tsp baking powder.

Cooking

1. Chop the boiled egg, chop the onion and send everything to a bowl.

2. Beat the raw egg with kefir with a mixer. Or we use fermented baked milk, curdled milk, any natural yogurt or fermented milk product. Even low-fat sour cream will do.

3. Add salt with sugar, throw baking powder and flour. We shake for a minute.

4. Pour the dough to the onion with the egg. Stir, now do it with a spoon.

5. Fry small cakes in oil in a frying pan. Brown well on both sides.

6. Or pour into a greased form and bake in the oven at 180 degrees.

Unleavened cakes with onions in a pan

Another variant of cakes with onions, which are often found in Uzbek cuisine. The dough for them is fresh, like dumplings. Onions are used. Flat cakes are quite salty, served with any first and second courses.

Ingredients

0.26 kg flour;

100 ml of water;

1 spoon of oil;

1 head of onion.

Cooking

1. We dissolve an incomplete teaspoon of salt in the prescription liquid, pour in vegetable oil and knead a very tough dough with flour. We put it in a bag for half an hour. No need to send to the refrigerator.

2. While the dough is lying, you need to finely chop the onion and mix with a pinch of salt. We leave.

3. We take out the dough from the bag and divide it into two parts. We roll out thin cakes alternately, grease with oil and sprinkle with chopped and salted onions. We roll the rolls.

4. Cut each roll across into pieces of 3-4 centimeters. We put on the table with the onion side and roll out small cakes.

5. Fry in a pan on both sides.

Flatbreads with green onions and egg on kefir

A variant of very interesting tortillas with green onion and egg, which also does not require a lot of time or complex ingredients. Instead of kefir, if desired, we take any other fermented milk product.

Ingredients

2 cups of flour;

100 ml of oil;

0.5 cups of kefir;

1 bunch of onions;

1 boiled egg;

Cooking

1. Salt the raw egg and beat with a fork, send kefir to it, then pour in the flour.

2. Thoroughly knead the elastic mass, adding a spoonful of oil drop by drop. Let the test stand for twenty minutes.

3. While the dough is infused, chop the onion and egg, add a pinch of salt to them and stir.

4. We roll out a not very large cake from the whole dough, sprinkle with egg and green onions, take a rolling pin and slightly roll the filling into the dough itself.

5. Roll up a thick roll, cut into transverse washers.

6. Dip on both sides in flour and roll out the place of cuts. We make thin cakes up to four millimeters.

7. Pour the oil into the pan, heat it up.

8. Fry the cakes on both sides, serve cold or warm.

Flatbreads with onion and yeast cheese

A variant of very fragrant yeast cakes with onions that are baked in the oven. Plain dough with milk. But you can take any other and make donuts using this technology. The type of cheese doesn't matter either. Onions for this recipe need onions, it is better to take a white variety.

Ingredients

10 grams of yeast;

450 grams of flour;

250 ml of milk;

1 tsp. salt and sugar.

For filling:

3 onion heads;

0.1 kg of cheese;

3-4 sprigs of dill;

1 clove of garlic;

1 spoon of oil;

Pepper, salt.

Cooking

1. Warm up the milk. We throw salt and sugar into it, we breed dry yeast and add all the flour. The dough will not be runny, but not too tight either.

2. We shift the mass into a saucepan, cover with a napkin and send it to heat. You can forget about the dough for a couple of hours so that it rises well.

3. Cooking the filling. Chop onion with garlic, add grated cheese, followed by chopped dill. Season with pepper, salt, pour in a spoonful of oil. Let the fragrant mixture stand for half an hour.

4. We roll out our dough into a cake, pour all the filling at once and press it against the layer with our palms. You can roll a little with a rolling pin, but not much. The layer should not be thin.

5. Cut into pieces of four centimeters. Let's lie down on the table for ten minutes.

6. Flatten the cakes with our hands and send them to a baking sheet. Let the puffs rise.

7. We bake in the oven. We set the temperature to at least 200 so that the onion donuts do not dry out and remain soft.

Cheese cakes with green onion and egg

To prepare such cakes with green onions and eggs, you will need a small amount of hard cheese. The dough is prepared on kefir, it turns out very soft and airy.

Ingredients

0.1 liters of kefir;

50 grams of cheese;

1 spoon of oil;

1 raw egg;

½ tsp soda;

1.5 cups flour;

Salt with sugar.

For the filling, one bunch of onions, a spoonful of mayonnaise and two hard-boiled eggs.

Cooking

1. Knead the dough. To do this, stir soda with salt and a pinch of sugar in kefir. It is needed to make the cakes ruddy.

2. Then add a little with flour and finely grated cheese. Or just throw everything together and beat with a mixer for two minutes, add flour and knead. The quality of the test will not change from this. Let's stand for fifteen minutes.

3. It's time to chop the eggs with onions, salt and season the filling with mayonnaise. You can take sour cream.

4. Divide the dough into small pieces. The number must be even. Roll out very thinly in pairs. We smear a little stuffing and cover with a second cake. We pinch the edges.

5. It remains only to fry the resulting donuts in oil on both sides. It is not worth doing a very large fire so that the products have time to fry well.

6. The same cakes can simply be rolled out, half greased with minced meat, folded in half and pinched in the form of pasties.

Puff pastry with onions

Store-bought dough is used for these onion cakes, which is very convenient. You can cook them in a few minutes. Onions are used.

Ingredients

1 pack of dough;

2 onion heads;

A little oil;

Seasonings.

Cooking

1. Cut the peeled onions into cubes and sauté in oil. Cool, season with salt, pepper, you can take a mixture of any seasonings and herbs.

2. Since the dough is purchased, it is easier to give the cakes a square or rectangular shape. Roll out the layer thinly.

3. Sprinkle half with fried onions.

4. Cover with the free part. We try to match the free edges.

5. We take a rolling pin and roll out the layer again. But a little.

6. Cut the cakes of the desired size. They must fit in the pan. You can cut many small squares or triangles.

7. Fry on both sides, cool slightly and serve.

Flatbreads with green onions and egg on mineral water

Recipe for juicy and slightly crispy tortillas with green onion and egg. For the test you will need mineral water with gas.

Ingredients

250 ml of water;

1 tsp without a slide of salt;

2 tsp Sahara;

2 tablespoons of oil;

About two cups of flour.

For the filling 2 eggs, a spoonful of sour cream and a large bunch of onion feathers.

Cooking

1. Throw salt into the mineral water. But if the water is very salty, then the amount can be reduced.

2. Next, start the sugar and stir.

3. Add butter, pour flour. We make cool dough. Let's rest for half an hour.

4. Cut the onion with eggs and mix, you can add a little salt. For juiciness, add sour cream to the filling.

5. We roll out thin cakes from the prepared dough, put a little stuffing on the central part and spread it.

6. We cover with a cake of the same size. The edges need to be pinched together well.

7. Fry in a pan. Maybe in oil. But these cakes are also delicious in a dry frying pan.

Instead of green onions, you can add leeks, red or white onions to the dough for tortillas. If there is concern about the spicy taste, then the heads can be finely chopped and lightly fried in a pan. But you shouldn’t blush the vegetable too much, otherwise the pieces in the cakes will burn.

Green onions in tortillas will be more fragrant if chopped feathers are slightly mashed with salt before adding. You can also add pepper, any herbs to them.

If the cakes are baked in the oven, then you can sprinkle the donuts with sesame seeds, caraway seeds or any nuts. And so that everything sticks and does not fall off, the workpiece can be sprinkled with water before sprinkling.

In the dough for cakes, you can add not only simple onions, but also marinated in vinegar. The taste will be much more interesting.

Adding a small amount of sugar to the dough allows the cake to fry until golden brown and acquire a warm hue.

Pancakes with green onions in a pan are a hearty dish that can be served for breakfast, lunch or dinner instead of bread, or as an independent dish as a snack with a mug of milk or kefir. They are convenient to take with you on a picnic, work or on the road. Flatbreads are prepared quite quickly and simply and consist of the most affordable ingredients that are in every kitchen.

To make cakes, take wheat flour, salt, boiling water, vegetable oil, green onions.

Let's start by preparing the dough. We need good quality sifted flour. Pour it into a deep bowl. Add salt and vegetable oil, mix lightly.

Pour the boiled water over the flour mass. Take a spoon as the dough is hot and start mixing.

Knead soft dough on the countertop. Wrap in cling film and refrigerate for 30 minutes.

Prepare the filling. To do this, wash and dry green onions, finely chop.

Roll out the rested dough into a rectangular layer, not very thin.

Lubricate with vegetable oil.

Sprinkle chopped green onions on top. Distribute it evenly throughout the layer.

Roll up and pinch the edges.

Cut into slices into about 12 pieces. Flatten each piece first with your hands, then with a rolling pin. Dust the countertop with flour if needed.

Heat the oil in a frying pan. Place the workpiece. Fry tortillas with green onions in a skillet over moderate heat until browned on both sides.

Place on paper towel to remove excess oil. The cakes are ready.

INGREDIENTS

Boiling water - 300 ml.

Vegetable oil - 3 tbsp.

Flour - 400 gr.

Salt - 1 tsp

Green onions - ½ bunch.

Salt - 1/3 tsp

HOW TO COOK

Sift 350 g of flour into a bowl, add 1 tsp of salt, 3 tablespoons of vegetable oil, pour boiling water. We knead the dough.

Wrap in a bag and put in the refrigerator for 30 minutes, ripen and cool.

Finely chop the green onion.

The dough is rolled out into a layer 5 mm thick.

Sprinkle the tortilla with green onions, sprinkle with salt and roll the tortilla into a roll.

The roll is divided into 10 parts. We take one part, close up the edges on both sides, and roll out a thin cake.

Pour a little vegetable oil into the pan, fry the cakes on both sides over medium heat until golden brown.
