I am sharing an interesting new recipe for my favorite dish.
From Wikipedia I learned that there is a vegetarian version of Herring under a fur coat. Herring is replaced by seaweed, eggs by avocado, and egg-free mayonnaise is used. I wanted to try. Armed with the remnants of seaweed (bought a week ago), half a pack of mayonnaise, Wikipedia, intuition and other ingredients, I built something very similar to a fur coat. I put it in the refrigerator to brew, took it out, tried it ... and ...

I was surprised by the taste ... harmonious ... fresh, very pleasant. Its zest is the combination of the specific aroma of kelp with the sweet and sour apple. Boiled vegetables add satiety to the salad. I advise you to try ...

Ingredients for cooking: seaweed (kelp), apple, onion, potatoes, carrots, beets, mayonnaise, vegetable oil.

I will immediately apologize to the vegetarians, I had the usual mayonnaise. Although, it seems to me, you can try to make such a salad instead of mayonnaise with vegetable oil. Adding additional vinegar, salt, something else ...
The apple appeared in my salad because there was no avocado. And the second reason: I read on the Internet that in an ordinary fur coat (with herring), some separate layer is made with an apple.

Pre-boil potatoes, carrots and beets in the skins. Cool, peel, rub on a coarse grater.
We slice the seaweed across with a knife so that it is not so long.
Cut into cubes (or as you are used to) onions.
Last but not least, rub the apple without the peel on a coarse grater (so as not to darken).
About seaweed. I already bought it with vegetable oil, salt and vinegar (without any additives - carrots, onions, etc.). Therefore, if you have kelp without oil, then sprinkle it with oil. And vinegar. Alternatively, pickle onions in vinegar.

Lay on a flat dish in layers:
- seaweed;
- onions, greased with mayonnaise;
- an apple, grease with mayonnaise;
- potatoes, sprinkle it with vegetable oil for juiciness, then grease it with mayonnaise;
- carrots, again - mayonnaise;
- beets, grease with mayonnaise.
We put the finished salad in the refrigerator for a couple of hours.

As for the thickness of the layers, in my opinion…. Unlike a classic fur coat, this salad shouldn't be too tall. The fact that he looks tall in my photo is because of the very small plate.
Kelp should not be too much so that it does not interrupt other vegetables. Pronounced specific aroma.
I rubbed the apple a little. Literally in one layer. Apple did not dominate. Only created a pleasant contrast to the taste of kelp.
As for potatoes, it's important not to overdo it. Otherwise, it will give excessive satiety, it will be rude.

I wonder how such a salad will turn out with the addition of avocado ...?

The list of the most popular includes not only the classic “Olivier”, “Mimosa”, but also the invariable “Herring under a fur coat”. If you think that it is impossible to cook it without fish, then you are deeply mistaken. It is because of this component that many people dislike the dish.

Useful advice. For a more fishy taste, replace the seaweed with nori leaves. They are perfectly soaked in juices from other components and oils.

  • Put the avocado mass and carrots on a seaweed pillow.
  • The top layer is beetroot topped with avocado.
  • We decorate the salad with shredded herbs, send it to the refrigerator to soak.
  • We serve to the table.

  • Beets - 2 pieces.
  • Carrots - 2 pieces.
  • Potatoes - 2 pieces.
  • Fresh cucumbers - 2 pieces.
  • Noria - 3 leaves.
  • Aromatic smoked cheese - 200 grams.
  • Sour cream - 200 grams.
  • Mustard - 2 tablespoons (liquid or granular).
  • Spices, salt to taste.
  • All vegetables, except for cucumbers, are boiled in uniforms. After they have cooled, peel and rub on a coarse grater.
  • Cooking a delicious sauce. We send sour cream, mustard, salt and spices to the blender bowl. Beat thoroughly for a couple of minutes into a homogeneous mass.
  • Tear nori leaves into small pieces.
  • Three smoked cheese on a coarse grater.
  • Chop the cucumbers into small slices.
  • We spread our salad in words in the following sequence: potatoes, nori, cucumbers, carrots, cheese and beets.
  • Each layer must be soaked in a little sauce. At the very end, we decorate the salad with a mesh of mustard-sour cream spreading.
  • We send it to the refrigerator to soak for half an hour.
  • Serve to the table, garnished with twigs or finely chopped herbs.

Many people believe that vegetarians and vegans, who generally eat only plant foods, cannot get a full festive feast. Let's dispel this myth, because there are so many recipes for delicious dishes prepared without meat and in general animal products that a vegan festive table will look no less beautiful, and the dishes will be tasty and satisfying.
For example, it is a very satisfying and healthy dish, because beans are an irreplaceable source of vegetable protein, and even those who are far from vegetarianism will like it because the combination of tastes is so interesting. If you are not vegan, then you will certainly be interested.
In the Vegan Herring under a Fur Coat recipe, all the ingredients are very simple, except perhaps the nori leaves. Nori is seaweed, dried and pressed into thin sheets like paper. Nori are irreplaceable in the preparation of sushi, they are widely used in the preparation of many dishes of Japanese, Korean and Chinese cuisine. Please note that the nori leaf should be slightly softened with water when placed in a salad. Today there are so many exotic products on sale that nori, I think, will not be difficult to buy. Beets - 1 pc. (large)
Carrots - 2 pcs.
Potatoes - 4 pcs.
Pickled cucumbers - 3 pcs.
Lean mayonnaise - 200 g
Nori sheets - 2 pcs.
Water - 2 tablespoons

How to cook vegan herring under a fur coat.

1. First of all, you need to boil vegetables. Rinse them thoroughly under running water (preferably with a brush). Usually, all vegetables are boiled together, taking them out of the water as soon as they are ready, but I suggest another option. Even if you cook all the vegetables in their skins, the beets will inevitably color them. To prevent this from happening, I boil the beets in a saucepan, and put an aluminum colander on the pan, and potatoes and carrots are steamed in it under a lid. This, by the way, turns out to be much more useful. You can easily check the readiness of vegetables with a knife or fork.
2. Rinse the boiled vegetables with cold water and let them cool down, then peel them and rub them separately on a fine or medium grater.
3. Put a layer of grated potatoes on a dish, level it with a fork and cover with a layer of mayonnaise.
4. Spread the nori sheet with the second layer, moisten it with 1 tbsp. spoon of water so that it softens, and spread the diced pickles in an even layer. Lubricate with mayonnaise.
5. Lay the nori sheet again, grease it with a second spoonful of water, and on it - with a uniform layer of carrots. And again grease with mayonnaise.
6. The last is the layer of beets, smeared with mayonnaise. The salad must be kept in the refrigerator for at least 2 hours, and before serving, decorate to your liking.

I decorate the Herring under a fur coat with neatly chopped onion rings, and in the center of each I spread a leaf of parsley and what remains of other salads: canned beans or peas, or a small cube of carrots. And for the New Year, for example, you can lay out a herringbone from dill sprigs. In general, turn on your imagination!

Vegetarian “fur coat” without herring

Compound:

  • 800 g potatoes
  • 800 g carrots
  • 800 g beets
  • 350 g seaweed
  • 300 g of Adyghe or processed cheese
  • 5 pcs of walnuts
  • 250 ml sour cream
  • 400 ml
  • spices optional: ground black pepper, cinnamon, nutmeg, ground coriander

Recipe for vegetarian herring under a fur coat:

  1. Boil potatoes, carrots and beets in "uniforms" with steam or in water.
  2. When the vegetables have cooled, peel them.

  3. Now you need to grate vegetables and cheese separately. Beets and carrots are best on medium, and potatoes and cheese are best on a coarse grater.
  4. Rinse the seaweed and chop finely. She perfectly replaces herring in this salad.

  5. Add 2 tbsp. spoons of sour cream in carrots and beets, and in potatoes - 3-4 tbsp. l.
  6. Add spices (optional) and 1 tsp each. salt:
    • in beets - a pinch of cinnamon and nutmeg
    • in carrots - 1/2 tsp. ground coriander and a pinch of black pepper
    • in potatoes and seaweed - 1/2 tsp each. asafoetida and some ground black pepper

    If you don't have any spices, it's okay, it will still turn out delicious.

  7. Crush the walnut kernels.

  8. Pour it into the beets and stir.

  9. Now all the components of the “herring under a fur coat” salad are ready for us and you can proceed directly to laying out the layers, greasing each one. For this amount of food, a deep dish 25 cm Ø and approx. 9 cm high is best.
  10. Put 1/2 part of the potatoes on the bottom, smooth with a spoon and brush with mayonnaise.

  11. Make the next layer with 1/2 part of seaweed and brush with mayonnaise as well.

  • Potatoes - 4 pcs.

  • Sour cream - 250 g.

Boil carrots, potatoes and beets in their skins. Learn that beets take about 1.5 hours to cook. Cool vegetables and peel them, first rub half of the potatoes.
Then lay out the seaweed. In the photo, I laid out the cabbage as it was in the jar. Nevertheless, I recommend that you grind it beforehand. Otherwise, it will not be very convenient to eat and cut such a salad.
Grate half of the Adyghe cheese with the next layer.
And then lay out a layer of half of the grated carrots.
Make sour cream mayonnaise according to this recipe (BELOW) and brush on the carrots. Remember to add salt or sour cream if you decide not to bother with the sauce.
Now we repeat everything. We spread a layer of potatoes.
Then another layer of Adyghe cheese.
A layer of boiled carrots.
And again a layer of sauce.
Then carefully cover the salad with a thick layer of beets.
And grease the salad with sauce or sour cream. If you made a salad on a platter, then for sure there were sloppy bloopers from beets and sauce around the edges. Take a slightly damp cotton pad and peel the edges of the plate and your veggie fur coat without herring is ready! Good appetite!

Sour cream sauce-mayonnaise for a fur coat without herring:

  • Sour cream - 250 ml
  • Turmeric - 1 tsp
  • Asafoetida - a pinch or garlic salt - ½ tsp.
  • Ground black pepper - ½ tsp.
  • Mustard (tube) - 1 tsp

Place all ingredients in a bowl and beat with an immersion blender or fork.

Store the sauce in the refrigerator.

Recipe 3: Vegetarian "fur coat", as herring - fried mushrooms

We take products as for “under a fur coat” herring

I have:
2 boiled potatoes,
1 large boiled carrot
1 boiled beet
2 pickles,
lean mayonnaise.

Instead of herring, we take mushrooms fried with onions - I have champignons.

Cooking like a herring.
I just:
mushrooms, mayonnaise,
potato
cucumbers
carrots, mayonnaise,
beets, mayonnaise.

Three vegetables on a grater - small or large - as you like.
Between mushrooms and potatoes, you can still cut a fresh onion - if you like onions.

I tried it at my husband's birthday - everyone liked it very much, both fasting and non-fasting.

Recipe 4: Vegetarian fur coat without herring with salted mushrooms

Probably, many people love a herring coat. An ambush in a salad is a bone, although now, probably, everyone buys a peeled fillet. We are preparing our own version of the salad. An ideological inspirer is a friend. We used to make just a "fur coat" or mimosa, and friends treated us somehow with a variant with lean soy mayonnaise and salted oyster mushrooms (they marinated them in vinegar and with special spices for fish). I decided to make it with salted milk mushrooms, there were no oyster mushrooms.

Boiled potatoes 200 grams,
Boiled carrots 200 grams,
Boiled beets 200 grams,
Onions 70 grams,
Salted mushrooms 200 grams,
Soy mayonnaise 150 grams,
Sea salt

I don't have a salad dish, so I made something similar to it out of cardboard, although then I guessed that it was possible to cut off part of the bottle from the water. It would be a ring.
In principle, a salad is not much different from a herring under a fur coat. Milk mushrooms go to the very bottom, then onions.

It makes sense to pickle the onion lightly.

We rub the vegetables on a thin grater.
