In our country, the opinion has already taken root that production in Russia has died and nothing is working for us now. Only raw materials are mined. But this is not the case. Production not only works, but also expands - new factories are being built. As an example of a recently opened production - this is the plant for the production and bottling of natural reconstituted juice LLC Imperia Sokov Plant in the city of Volsk, Saratov region, which we managed to visit the other day. The construction of the plant began in 2014, it was recently opened and, naturally, has not yet started operating at full capacity, but juice production is already underway.

Let's see from the inside how the juice production process takes place.
Juice is obtained here by diluting the corresponding concentrate. That is, first, the raw materials are processed, removing the water component from the directly squeezed juice. Thus, a concentrate is obtained, which allows you to save several times the volume for the convenience of storing and transporting raw materials to manufacturing plants. And then at the plant, the brought concentrate is diluted with water, and in the same volume in which the concentrate was deprived of it. This is what they are doing at the Volsk plant.
But water for this process is not simple. It is not diluted with tap water here. It is cleaned here, and very high quality.

Filters are needed for cleaning. There are several types of them. There are charcoal filters.

There are lightening filters. All filters are presented in several copies.

There is even an ultraviolet sterilizer. And all this is "under the control" of a special water purification station, which, by the way, is collected in Saratov.

Everything is automated.

For the production of juices, steam is also needed, for which the plant has its own steam generator.

The company uses the most modern and innovative technologies from Tetra Pak. Such technologies subject raw materials to gentle processing, preserving their natural taste and nutritional value.

Since the whole process is automated, the production capacity at the plant is not small either. The juice is bottled in 3 types of packaging: 0.2, 1.0 and 2.0 liters. Accordingly, this is the amount of juice produced per shift:
- 0.2 l bottling line: 1200 liters per hour, 9600 liters per shift (8 hours);
- filling line 1.0 l: 8000 liters per hour, 64000 liters per shift (8 hours);
- filling line 2.0 l: 10,000 liters per hour, 80,000 liters per shift (8 hours);

The plans of the management are to increase the volume of products by expanding the staff and operating the plant in 2 shifts. In the meantime, thanks to the plant, 60 new jobs have appeared in the city with an average salary of 25 thousand rubles. A the volume of tax payments to all types of budgets will amount to 20 million rubles per year.

Before dilution, all concentrate is tested in the factory laboratory.

It turns out that the acidity regulator - citric acid is added to the juice as an acidity regulator, and not as a preservative.

Depending on the variety and batch of fruits, they can have a different taste, differing in sweetness - more or less sweet. The amount of citric acid that is added to bring the taste of the juice to a standardized level depends on the sweetness.

The work in the laboratory is painstaking.

Of course, we couldn't help but have a tasting. A concentrate of orange and apple juice was provided for the tasting.

The concentrate looks like jam, the taste is sugary. Very luscious and very sweet.

The juice itself was tasted. The result is a delicious juice, even very tasty. Yes, here you can joke about the name, but this is not the main thing in the juice. The main thing is the taste, which is very good. By the way, most of the juice produced will go to the RF Ministry of Defense. But the plant has an intention and the sale of juice among ordinary residents of the Saratov region and neighboring regions. So, there are already agreements with large chain stores Pyaterochka, Grozd, Semeiny and Auchan. It is on their counters that we will be able to see the plant's products.

The company does not plan to lay its own gardens. But on the other hand, in parallel with the bottling of juices, he is carrying out another project - to grow tomatoes and cucumbers in greenhouses. 9 hectares of land near Volsk were purchased for the greenhouse complex, the first greenhouses were commissioned at the end of last year.
In the meantime, the bosses at the plant take care of their workers. There is even a room for psychological relief. True, by a strange coincidence, it is located next to the director's room. Coincidence!

Apple juice is the juice that is squeezed from fresh apples. The sweet taste comes from the presence of natural sugar in apples. Currently, most of the apple juice is produced industrially using pasteurization and aseptic packaging.

Apples are the most popular pome fruit used for the production of canned food. Apple juice technology.

According to this regulation, there are:
- directly squeezed apple juice (juices obtained from fresh or kept fresh apples by mechanical processing);
- freshly squeezed apple juice (obtained by direct extraction, not canned, made in the presence of the consumer from fresh or kept fresh apples);
-concentrated apple juice (made by physically removing water from juice in order to increase the amount of dry soluble substances by two or more times);

The delivery, acceptance and storage of components for the production of apple juice is carried out in the same way with the process of manufacturing various types of canned food. Raw materials are thoroughly washed, then inspected to remove fruits that have been affected by pests, as well as rotten and other violations. In the production of apple juice, the main method of affecting plant tissue is mechanical crushing (grinding). But very fine grinding can make the tissue a solid mass, which lacks the channels needed for the juice to flow out.

By pressing, centrifugation, diffusion and other methods, juice is extracted from the apple pulp. Pressing is the main method of extracting juice from fruits. The juice is extracted by applying pressure to the pulp.
The destruction of plant tissue by pressure, crushing of the biomembrane of the cell structure is not a function of pressing. Its main function is to squeeze out the juice, which was obtained from cells damaged by pre-treatment. Compression is not used to extract juice from cells, but is used to extract juice (liquid phase of pulp), which flows out of destroyed cells before pressing. Pretreatment of raw materials mainly affects the high yield of juice from the fruit.

To achieve a more pleasant taste, juices are blended (mixed). They can mix juices of two different types, juices of the same type of apples or juices of apples containing different amounts of sugar and acid.

Each region of Russia is a separate, very interesting world filled with marvelous and unique places, historical sights and numerous monuments. It was here in 2007 that our cooperative SPPK "Gifts of Nature" was created.

Initially, we provided services to the population for the cultivation of fruits and vegetables, as well as purchased vegetables and fruits from the population for the purpose of their further processing.   • Bottling of finished products.

And the production of directly squeezed juice begins with the receipt of the initial component - the concentrate. Such a scheme is rarely used at domestic enterprises, since it is not always profitable due to the high cost of the process and the resulting product. But with the presence of such equipment, it is possible to establish within the walls of the workshop the production of not only natural juices, but also fruit purees. By selling juices and purees, an entrepreneur will be able to get more profit and enter new sales markets.

Lines of European production are famous for their quality - they can work in continuous mode for a long time without failing.

The cost of the entire technological line will be influenced primarily by its capacity. But even in the case of machines of small or medium capacity (0.5-1 t / h), the price of equipment for the production of juices will be quite high - starting from 2,500,000 rubles. And there is only one way to save money here - to buy a supported line. But such transactions must be approached with great caution, since there is a great risk of buying a low-quality installation, which will break down very soon.
