I never expected that I could make vanilla marshmallows at home. After reading recipes on the Internet, I finally decided to try it, and guess what, I was very pleased with the result. Now I only eat homemade vanilla marshmallows. To prepare, we need a simple set of products.

First of all, we need to prepare the apples. It is better to take green apples with sourness. Wash and dry with a napkin. Cut in half and remove the core. Place cut side down in a baking dish. Place in a hot oven. Bake at 200 degrees for 50-60 minutes.

Remove the skin from the hot apples, transfer the pulp to a blender bowl and grind to a puree consistency.

Immediately, while the puree is hot, add vanilla and simple sugar and stir until dissolved.

Add chicken protein, about half of the coarse protein, to the cooled puree and continue beating until the mass increases and becomes light in color.

While the apple mixture is whipping, prepare the syrup. Pour water into a saucepan and add agar. Bring to a boil while constantly stirring and immediately remove from heat.

Add sugar. Send to medium heat. Stirring constantly, bring to a boil and simmer for 5 minutes. Remove from heat and cool to 80-85 degrees.

Pour the syrup into the apple mixture in a thin stream. At the same time, we do not stop whisking. Continue beating until stable peaks form.

The marshmallow mass is ready.

Place in a piping bag fitted with a star tip.

Prepare a board with parchment in advance. Pipe marshmallows to the desired diameter. Leave to dry for 24-26 hours at room temperature.

Sprinkle with powdered sugar and combine in pairs. Homemade vanilla marshmallows are ready.

How to make homemade vanilla marshmallows

You will need:

  • 3 cups fine sugar
  • 250 ml water
  • 20 g powdered gelatin
  • 1 tsp citric acid
  • 1 tsp baking soda
  • 1 cup powdered sugar

Start making homemade marshmallows by soaking the gelatin. Pour 150 ml of cold water into a cup and add gelatin, stir and set aside for 1 hour to swell. Pour 100 ml of water into a saucepan, heat it, add sugar, stir, bring to a boil and cook the syrup. Pour hot sugar syrup into the swollen gelatin and beat with a mixer until white. Add citric acid and continue whisking. Add baking soda and vanilla and beat for another 4 minutes, then use a culinary syringe with a wide shaped nozzle to pipe the mixture in portions onto a baking sheet moistened with water. When the marshmallows are dry, remove them, put them together in pairs and roll in powdered sugar.

You can also make chocolate marshmallows using the same recipe. After preparing the treat, melt a large bar of dark chocolate in a water bath and dip the marshmallows into the resulting viscous mass. These homemade sweets look very appetizing and are very tasty.

How to make homemade apple marshmallows

You will need:

  • 4 apples
  • 250 g sugar
  • 1 raw egg white
  • 1 packet of vanillin

For the syrup:

  • 500 g sugar
  • 160 g water
  • 8 g agar-agar
  • glass of powdered sugar

Pour water over the agar-agar and let it sit and soak. Cut the apples in half and remove the core and seeds. Place the apples in the microwave and bake. Using a spoon, scoop out the pulp and discard the skin. Grind the pulp into puree using a blender or rub through a sieve. Combine applesauce with sugar, add vanillin and leave until cool.

Choose sweet apples with a pronounced aroma

Place agar-agar on the stove and heat until it is completely dissolved in water. Add sugar and bring to a boil. Boil the syrup for 5 minutes and check for thickness. If it pulls out in the form of a thin thread behind a spoon, remove from the stove and cool slightly.

Add the egg white to the applesauce and sugar mixture and beat until foamy. Carefully pour in the slightly cooled agar syrup in a thin stream. At the same time, whisk constantly, as a result you should get a very thick mass. Next, quickly transfer it into a bag with a nozzle and squeeze it out in small portions onto pre-spread baking paper.

Place the marshmallows on the paper very quickly so that the mass in the pastry bag does not have time to cool, since agar-agar sets already at a temperature of 40°C

What should a healthy and tasty marshmallow be like? According to the classic recipe, it should include fruit puree (most often applesauce), whipped egg whites, sugar and a gelling agent (pectin, agar-agar, less often gelatin). Obviously, the taste and color of natural marshmallows will depend entirely on the fruit puree. Since apple is most often used, the soufflé turns out snow-white. When adding berry puree, the color may turn out slightly pinkish, but not bright pink.

It is worth noting that if the marshmallow from the store has a too bright shade or, conversely, a grayish color, it means that it is made from unnatural ingredients. This can be easily checked by reading the information on the packaging. In addition, the composition of marshmallows according to GOST does not allow the use of foreign impurities, so if the packaging contains the inscription “GOST 6441-96”, then this is a healthy treat. However, it is worth paying attention to the fact that natural marshmallows in packaging can be stored for no more than 1 month. If the expiration date is longer, it means preservatives have been added.

Variations on a theme

Of course, over time, the production technology and recipe of classic marshmallows changed and became more complex. As a result, today there are a considerable number of different types of marshmallows on store shelves: vanilla, chocolate, creme brulee and others. Unfortunately, the modern buyer is no longer happy with ordinary white marshmallows. The composition of “multi-colored” species, as you may have guessed, will not be so natural. But still, occasionally you can treat yourself to a harmful product... But only occasionally!

Thus, any marshmallow with different flavors (vanilla, coffee, creme brulee, cranberry or ice cream) will most likely contain artificial or identical natural flavors and dyes. This is due to the fact that the technological process does not allow the addition of natural ingredients. Otherwise, the price of natural raw materials will make the delicacy simply inaccessible to the buyer. Thus, vanilla marshmallows very rarely contain natural vanilla; it is usually replaced with cheaper vanillin. But even housewives do this, not just factories.

Separately, it is worth noting chocolate covered marshmallows - one of the most popular desserts. Of course, the presence of glaze makes it tasty, but less healthy. Moreover, its composition often does not include natural cocoa butter, but its equivalent, for example, lecithin. Obviously, the calorie content of marshmallows in chocolate will be much higher than usual. However, even ladies who watch their figure can afford such a delicacy for breakfast.

This brand sells both chocolate-covered marshmallows and plain marshmallows. The composition in both cases is almost the same: sugar, applesauce, molasses, dried egg white, lactic acid, apple powder and flavoring identical to natural. “Almost” a classic recipe, isn’t it? Unglazed marshmallows "Charmel", the composition of which is given above, are available in three types: apple, ice cream flavor and vanilla flavor.

Marshmallows in chocolate "Charmel", as we have already learned, have a complex composition. So, the glaze includes cocoa powder, cocoa butter or its equivalent, lecithin, flavoring and milk sugar. The marshmallow itself has the same composition as regular marshmallows. Here the manufacturer decided not to change the already proven recipe. It is also worth paying attention to the fact that not only regular-sized marshmallows are produced, but also small “one-bite” marshmallows. True, the assortment consists of only 3 varieties: classic, coffee and ice cream flavored.

Zephyr "Neva"

The composition of this delicacy is as close as possible to the classic recipe. It is the use of natural raw materials and a minimal amount of artificial additives (usually only flavors and dyes) that makes it popular among consumers. In addition, the Neva factory under the Lyanezh trademark produces more than 10 different types of marshmallows. On store shelves you can find marshmallows "Neva" white, white-pink, vanilla, creme brulee, cranberry, in dark and white glaze.

Of course, such an assortment will satisfy the most demanding buyer. And if you consider that the price of this marshmallow is slightly lower than that of its closest competitors, it simply has no equal. In addition, the Neva factory took care of patients with diabetes and produced a series of fructose-based marshmallows.

Benefits and harms

So why is marshmallow so beneficial? The applesauce and pectin it contains improve digestion, remove harmful substances and toxins from the body, and strengthen the immune system. It is easily and quickly absorbed by the body due to the presence of light carbohydrates. True, because of them, people prone to obesity should not indulge in marshmallows. Its calorie content per 100 g of product is 321 kcal. If you consider that these are usually 3-4 pieces, then the result is a light sweetness. The most important thing is that the marshmallow contains only natural ingredients, then you can be absolutely sure of its benefits.

Homemade marshmallows

The composition of the delicacy, prepared with your own hands, is completely natural. Having modern technology, you can easily prepare healthy marshmallows at home, strictly following the GOST recipe.

Soak 4 teaspoons of agar in 160 ml of cold water and leave. Bake 4 large apples in the oven until tender, rub them through a sieve to make a puree. In total you will need 250 g. If desired, you can add vanilla sugar to it and cool completely. Bring the agar to almost a boil over heat until it dissolves in the water. Add 490 g of sugar, bring to a boil and simmer over low heat until a thick syrup is obtained. Remove and cool slightly.

During this time, the applesauce just came up. Add 1/2 egg white to it and beat until the mixture turns white. Next, add the rest of the protein and beat until fluffy. Add agar: pour it in carefully, in a thin stream, without stopping whisking. Quickly, using a pastry syringe, pipe marshmallows onto the parchment. Leave to dry for 4 hours, then mold in pairs and sprinkle with powdered sugar. Homemade marshmallows are ready!

Pour water for the syrup into a saucepan, bring to a boil, add sugar.

Cook over low heat, stirring constantly for 3-4 minutes until the sugar is completely dissolved. Add swollen gelatin to the prepared syrup, stir and remove the pan from the heat. Leave for 2 minutes, then add vanilla and beat the hot mixture with a mixer at high speed for 5 minutes. The mass will thicken, increase in volume and turn white.

Set the pan aside and let the mixture rest for 5 minutes. Then beat again for another 5 minutes. The mass will become even thicker.

After this, add soda and lemon juice. Beat by hand with a whisk until the mixture increases in volume. Line a baking sheet with parchment paper slightly moistened with water. Pipe marshmallows with a pastry syringe with a star attachment or spoon out.

Place the marshmallows in the refrigerator for 3-4 hours. After this, using a spatula, remove the marshmallow halves from the baking sheet, connect 2 pieces together and roll in powdered sugar. Sweet, aromatic and very tasty vanilla marshmallows can be served with tea!
